1) Preheat oven to 200 ºC
2) Season the fillets with salt and pepper and spread the pesto over the surface
3) Mix the bread crumbs with cheese, parsley, oil and a pinch of salt
4) Press the mixture over each fillet’s pesto so that it sticks
5) Cook the fillets in oven suitable casserole (preferably non-stick) for 1 and a half minutes on high heat
6) Place in the oven for 5 min approx. (until the coverage is golden) and serve immediately
